To celebrate Pancake Tuesday – 16th February 2021 – we thought we’d share with you how to make coffee pancakes.
Mark (Mini & Mighty MD) has been making pancakes for years and they are definitely a family favourite, so today we thought we’d try making coffee ones.
If you’re a coffee lover and love pancakes, you will really enjoy this. It’s subtle, but really delicious and great with butter and maple syrup.
Method: How to make Coffee Pancakes
Make your pancake mix by whisking 2 eggs in a mixing jug or bowl. Add around a litre of milk. For ours we used self-raising flour because we wanted the thicker, American-style pancakes, but go with what you prefer. Add flour gradually to your mixture, until it becomes the consistency of double cream. If you like, you can also add a splash of maple syrup and grate some chocolate into your mixture.
Once your pancake mix is ready, you will need to make 6oz of strong coffee. We used a Mokapot for ours, as it makes a good strong espresso, but if you don’t have a Mokapot, use whatever means you usually make your coffee – just make sure it’s strong and black.
Now you need to add the coffee to the pancake mix. Add this slowly, and keep stirring as you go so as to avoid it curdling. You will need to add more flour if your mixture becomes too runny.
Heat your oiled frying pan to a really high temperature before pouring your mixture in slowly, in a circular motion.
We made quite a lot of pancakes with our mixture, so if you don’t want as many, just reduce the quantities.
Serve with butter and maple syrup. The coffee flavour is subtle, but makes a great addition to what is already a favourite (well it is at Mini & Mighty HQ anyway).

We recommend Nothing To Declare, as it’s Decaf – great for kids or even if you’re just having them late afternoon or evening.
If you prefer them in the morning and need that caffeine fix, Miss Molly is our stronger blend. (Although we’ve no doubt all our blends will work well.)
